These are not "Pancakes" Simi-Failed Egg Fu Young… (Above)… For the paddy I used eggs, green onions, bean sprouts, sautéed shrimp & chicken, and “Oyster Sauce.” For the gravy I used 1 cup chicken broth, 2 tbsp. soy sauce, and more "premium" oyster sauce (thicken it all with a corn starch slurry)… this meal was not good. I think I may have a pre-disposition to NOT liking Oysters. (Below) I FIXED IT… I had 2 patties left over... so I prepared a "NEW GRAVY” and WALA! This meal …
36. SHRIMP FRIED RICE
Success & Failure at the same time. ALL THINGS ARE NOT WHAT THEY APPEAR… In this meal I used too much of the spices indicated below (I used all of them). As the “Spice Team” chart indicates… some of those spices seem like they might be what I’m looking for (to get the taste I’m trying to get)… however, I think I used too much of some, and not enough of the others. The trick is in the “amount”... here’s the key to “experimenting”… “pull some off to the side" try a seasoning on it, …
35. GREAT!!! Crock-Pot Roast (Keep it Simple)
Fabulous!!! And super tender! This was fabulous!!! Sorry there are no finished product photos, you're just going to have to trust me on this... this roast had a genuinely unique taste, one that I will be doing again in the very near future and often... it was that good. GREAT New Taste!!! Pork Shoulder, marinated with season salt, black pepper, and red pepper… add white onion, 2 chili peppers, cranberries, 2 slices of lemon, cook for 4 hours on low in a CROCK POT… this was …
34. UH OH! AUTHENTIC CHINESE SHRIMPS & FRIED RICE
Get back to those "Spice Teams" With this meal I got close to AUTHENTIC CHINESE FRIED RICE… just like that which was being sold at a restaurant in Gary, Indiana on 25th & Broadway back in the 60's & 70's, and just like that 7th & Washington restaurant that I talked about in earlier posts (the “La Estraleda”) you could get killed at that 25th & Broadway location too, but people still came from miles around to get some of that food. Again, I’ve never found anything “Chinese” …
33. JAMAICAN VEGETABLES & Fried Chicken
Southern Fried Chicken & JAMAICAN VEGETABLES I won't cover frying chicken here... I cover that in greater detail later in other post, just know that you basically season & flower the chicken, then deep fry it at about 300º for about 20 minutes. JAMAICAN VEGETABLES Sauté cabbage, white onion, and green onion add Allspice, Cloves, Nutmeg, Thyme, Garlic, Cayenne Pepper, and Cinnamon. CONGRATULATIONS… you’re eating “JAMAICAN." See "SPICE TEAMS" The rice The rice… in a pot, …
