“Oven Fried” Chicken
This is the Tastiest-Juiciest piece of chicken you’ll ever eat… Bake (covered) in 350º oven for 1 hr., then Broil (un-covered) for 4 min. on each side. Serve with sautéed cauliflower and cabbage w/garlic and red pepper flakes added to the oil to flavor the oil. All served with “steeped” rice.

Although this chicken is MIGHTY TASTY & JUICY… it lost some of the juices from where I probed it with a thermometer checking the temperature. Use an instant read thermometer with a EXTERNAL UNIT… so you can leave the probe in the chicken.

Note; A lot of the cause of juices leaking from protein is due to placing the product in a cold pan or dish then heating it… the product will retain more of it‘s juices if you place it in an already hot pan (or dish) before you start the cooking process. This applies to boiling and poaching as well.
